SHRIMP RECIPES
Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations.
This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.
INGREDIENTS
2 tablespoons butter
2 tablespoons extra-virgin olive oil
4 garlic cloves, minced
½ cup dry white wine or broth
¾ teaspoon kosher salt, or to taste
⅛ teaspoon crushed red pepper flakes, or to taste
Freshly ground black pepper
1 ¾ pounds large or extra-large shrimp, shelled
⅓ cup chopped parsley
Freshly squeezed juice of half a lemon
Cooked pasta or crusty bread
PREPARATION
In a large skillet, melt butter with olive oil. Add garlic and sauté until fragrant, about 1 minute. Add wine or broth, salt, red pepper flakes and plenty of black pepper and bring to a simmer. Let wine reduce by half, about 2 minutes.
Add shrimp and sauté until they just turn pink, 2 to 4 minutes depending upon their size. Stir in the parsley and lemon juice and serve over pasta or accompanied by crusty bread.
DIFFERENT WAYS TO COOK SHRIMP
Roasting
According to the Barefoot Contessa , roasting is the best way to prepare shrimp. It caramelizes them a little bit, which brings out a natural sweetness and intensifies their flavors. To roast them, just toss the shrimp in olive oil and salt, and cook in a 400 degree oven for 6-8 minutes. Ceviche
Ceviche is a seafood dish popular in Peru. It’s made from fresh raw fish and/or seafood that’s marinated in citrus, chiles and other fresh flavors. Breading
Breaded shrimp are delicious — and once the breading is done, the shrimp take only 1-2 minutes to cook through. First peel and devein the shrimp (it’s not necessary to remove the tail), dredge and coat them in a flour, egg, breadcrumb combination. Grilled
Grilled shrimp is the classic and simplest version of making a shrimp dish. It is fast, easy and only takes 15 minutes to make. This is a great dish to begin with before delving into the more complex and fancy shrimp recipes.

This sweet and sour crackerjack shrimp is a zesty Chinese style of shrimp. It involves velveting, which is a Chinese specialty consisting of marinating the shrimp with egg whites, cornstarch and sherry. Then adding chili sauce, garlic, ginger and sugar. For the shrimp, add in cornstarch and peanut oil and for the sauce add ketchup, chicken broth, sugar, garlic and ginger. This takes 1 hour of prepping and 5 minutes to cook.
