STEP 1 Combine potatoes and onion with egg in a bowl. STEP 2 Add flour slowly until mixture comes together. STEP 3 Add salt and pepper to taste. STEP 4 Cover base of fry-pan with oil and heat. STEP 5 Add spoons full of mixture into fry pan and flatten. STEP 6 Turn and cook until golden on both sides.

Yes, you can. In a large skillet over medium heat, add enough oil to fill the pan a third of the way up. In a large bowl, combine potatoes, cheese, chives, hot sauce, salt, and egg. Fry the mashed potatoes a few at a time (without crowding the pan), cooking each side until lightly golden, 2 to 3 minutes per side.
